There are a few reasons this can happen, and it is not necessarity because of an unethical coach...
The records posted in conference programs are the records submitted at the seeding meeting, which usually occursf the Monday before the tournament. Any matches between the seeding meeting and the actual tournament aren't reflected in the records that are listed. If a tournament happens to be postponed a week, as some conference tournaments were this year, it is very possible for a school to have 3 matches in those 2 weeks.
For a coach to put in a wrestler with a 1-0 record at a conference tournament, he probably wasn't originally expecting to have that wrestler in the tournament. There may have been an injury, illness, or some other factor that made the coach replace the wrestler who has been competing for most of the season. When this happens with short notice, the replacement wrestler's statistics might not be as up-to-date as it should be, resulting in an inaccurate record. Some coaches do the stats themselves; many have a manager, assistant coach, or parent in charge of that time consuming work.
For the situation brought up in the first post, it doesn't actually make a difference for sectional seeding because even with the "inflated" record, he still does not have 10 matches. If this particular wrestler beat another wrestler in his sectional, then he would get seeded ahead of that wrestler. If there is not seeding criteria for this particular wrestler, then it comes down to winning percentage, but without 10 matches he does not qualify for a seed. Occassionally there are exceptions to this, but it comes down to a vote by all of the head coaches.
